The history began, ironically, with a visit to eventual neighbor Monte Xanic, by Ernesto Alverez-Morphy Camou. He had arrived from Mexico City to oversee one of his real estate ventures, and came to Monte Xanic at the invitation of the owners. Impressed with the facility and wine quality, Alverez-Morphy quickly decided that his next project would be to build his own state of the art winery. And what better location than next to Monte Xanic? Thus in 1986 he purchased about 1200 acres in a nearby section of the Valley called Cañada de Trigo. He named the future winery, Chateau Camou, after his mother's maiden name. After planting only 100 acres the first year, about 50 more have been added with an annual expansion of about 12 percent anticipated.
Enologist and partner Victor M. Torres Alegre worked towards his doctorate in the Institute of Enology at the University of Bordeaux, France. Returning to Mexico, Victor Torres was hired by Chateau Camou to be its winemaker and production manager, and he has placed his stamp on the wines and design of Chateau Camou.
